Unrefined dark brown soft cane sugar undergoes less processing than white and brown sugar. It maintain some original molasses undertones and natural depth of complex flavour.
 

The colour is very dark brown to red shades and has moist and soft texture. This truly unrefined sugar retains a higher proportion of molasses than other types of sugar. It has slightly deeper flavour with notes of caramel and toffee.

The extra acidity of dark brown sugar, activates the baking soda. Thus, it is superb in chocolate chip cookies as it will raise slightly higher. The rich taste is ideal in cakes, gingerbread and puddings.
